Zesty Tacos

I love tacos. So when it was time to have tacos for dinner, I flipped through the book to see what there was, and this is what I found. Tacos with zesty italian dressing drizzled over top. Sound strange? It is, but it tasted just fine. If you aren’t a fan of italian dressing, you probably wouldn’t like these. But it’s a fun change to the tacos… but then again why change tacos? I’m glad that I tried it this way, but will most likely stick to good ole fashion tacos in the future. Thumbs up still.

Cherry Chocolate Cake

This was my first attempt to make a cake recipe into cupcakes… it didn’t go so well. First of all, I put way too much batter in the liners. They overflowed and totally look horrible. Then, I tried to inject the filling in the middle. I should have known that putting the pecans in there would just stop up the hole… that was a fiasco. Other than the looks and me wasting money on cream cheese, cherries, and pecans, the cupcakes tasted fine. The was hardly anything in the middle as I had hoped would go in there. I sprinkle the pecans on top for some extra taste. I probably will still be trying this again, since cupcakes are easier to bring to work when there are leftovers. I hate throwing away an entire cake. Thumbs to the side.

Nacho Mac N Cheese

This was delicious. What’s better than Mac N Cheese? Nacho style. The recipe includes ground beef and taco seasoning packet and cheese, I forgot to put red peppers on my grocery list so this dish is without those. I bought the tortilla strips from the salad topping shelf, and I think they worked perfectly. This recipe is probably my favorite for this post. I’d definitely recommend it. Thumbs up.

Spiedis

Perfect for barbecuing, I chose the spiedis, which is essentially a meat skewer. The marinade for these was amazing. I chose both chicken and steak for the meat, and use white wine vinegar and red wine vinegar respectively. The grocery stores by my house didn’t sell marjoram, so I put oregano in there as an alternative. Overall, these tasted phenomenal and will be definitely making them again in the future. Thumbs up.

Persimmon Salad with Honey Lemon Dressing

Along with the skewers and the Mac N Cheese, I thought it’d be smart to throw in a salad recipe too. Although I’m not a fan of salads that have fruit, dried fruit, or nuts, I chose this one just because it seemed simple. The dressing was simple to make, as I didn’t have to chill it ahead of time or anything. I was in such a hurry that I forgot to put the persimmons in the salad… doh! But I did make the salad again a couple days later and it was delicious. I’ll still stick to the traditional salad with ranch or balsamic as my dressing. Thumbs to the side.
