Asian Chicken Thighs

I love chicken. This recipe was an interesting one. First of all, it's not really a "teriyaki" sauce, which I am a big fan of this not being a teriyaki sauce. The sauce itself has brown sugar, orange juice, ketchup, and soy sauce. So it was a pleasant surprise when I dug into the final product and it was a tad sweet (normally I don't like sweet foods when I'm not eating dessert, but this one works well). I didn't like that I used skinned bone-in thighs. Next time I would probably substitute boneless, skinless chicken breasts  if   I   ever   made   it   again.   Pairing   this 
chicken recipe with white rice worked out perfectly. Thought the rice isn't part of the recipe, it's super easy to make so I couldn't say no to the Taste of Home suggestion of serving the chicken and its sauce over some white rice. Definitely a thumbs up on this recipe.

Devil's Food Cake with Chocolate Frosting

I was craving chocolate cake. So after perusing through my cookbook, I came across this Devil's food cake. I've had devil's food cake before, just have never made it. I had no idea that sour cream was put in here? Strange. Nonetheless, I had everything I needed already in the pantry so I begun to make this cake. I had to melt some chocolate. I will say that it isn't as easy using chocolate chips when comparing it to a plain old hershey bar like I used when making the Tandy Kakes.  I did  it  the  same  way  though,  made  my
own "double boiler" and melted it that way (the recipe says to melt it in the microwave, but I just don't have the patience for that and I almost always burn it that way!). After the batter was all made it baked for almost a half hour. One thing I wish I had for after that was done was a wired cooling rack. I was only able to take one cake out of its pan to cool completely while the other had to cool inside its pan. So when it came time to frosting and layers the two cakes, I had a hard time getting the other one out. It all worked out though. The frosting hid all the imperfections, and it still tasted delicious. I would definitely make this recipe again. Thumbs up.
