Asparagus Salmon Pie

On a night that I was spending the night alone, I decided to choose something from the cookbook that I knew Rick would not be eating. Asparagus Salmon Pie took the ticket on that one. By the sounds of it I too was a little worried. I mean, I love asparagus and I love salmon, but together in a pie? How would that even work?

Well, I’ll say that it’s more of a tart than it is a pie. An egg based treat like a quiche or something. This is the first time I’ve bought fresh asparagus and boiled them myself (quite well if I do say so myself). The overall recipe was extremely easy. Prepare asparagus, saute onions, beat eggs. Add all together and pour into a pie crust. ​
I just love Pillsbury pie crust. I’ll never make it from scratch again. The only hard thing about this recipe is that I didn’t know when to expect it to be done. I didn’t know what it was suppose to look like or what the consistency was supposed to be. So I just cooked it for the middle of the time range. Tasted good, especially with a little shredded cheese sprinkled on top. I don’t think I would make this again, but I’m glad I made it this time around. Thumbs up.

Bourbon Pecan Pralines

​This recipe was very easy to follow and made something delicious, unfortunately it was not a praline candy. I found that regardless of how long I let the candy cool in the freezer that it would not harden to the point where it could be picked up and be eaten like candy. This mixture should still be made, but be used as either an ice cream topping or as a way to make brownies into turtle brownies.

Amish Breakfast Casserole - by Joey

​Holy Cow this thing has a lot of cheese! It calls for almost 5 cups..... I deviated from the recipe by using only cheddar and cottage cheese and adding garlic (because I love it) and thyme (because I think it pairs really well with pork). This turned out great for our book club brunch and was a total hit! I think it would be great if bell peppers were added or if some of the cheese was substituted with pepperjack.

This simple whet my appetite as I was halfway down. a great set of recipes and yummy dishes I would love to try them out sometime. The Amish breakfast casserole is definitely looking scrumptious.
