[Pheasant] in Mustard Sauce

In trying to be healthy (I don’t think it’s working) I’m going through and making a lot of chicken dinners. This particular recipe was created for pheasant, but where would I get pheasant? I don’t even know when pheasant hunting season is or if it’s something you can do in Missouri, and if I did know these things, I wouldn’t go hunting. So I turned it into a chicken recipe and it was yum!

Dijon mustard is the only kind of mustard I can stand, and the sauce that was on this chicken was just delicious. I ended up doubling the recipe (I know it was strange, and apparently way easier than halving it) because the store didn’t have just two chicken breasts in a package. I’m glad I did though because the two of us ended up eating seconds and didn’t have any leftovers anyway!!
The recipe suggests to serve over rice, so that’s what I did. I don’t know about you, but I’m really bad at making rice. I honestly don’t know how that is possible. Heat water, add ice in a 1:1 ratio, and let the rice soak up the water. That’s how you do it right? I think I’m just too impatient to wait for the rice to soak up the water OR I don’t heat the water enough. One of those to things, but probably the first one.

I recommend this dish for sure! And I used the least amount of times on all the windows for the chicken. I feel like it was cooked perfectly (I couldn’t find my meat thermometer… this move has had me at a lost for several items). Make it! And if you’re a hunter, make it with the pheasant and let me know how it tastes!! It's quick and easy, perfect for a week night dinner.
