I'm a little sad that the leftovers for these didn't get eaten. Perhaps I need to put them in less discrete places in the fridge so we actually remember it's in there? The vegetables included onions, mushrooms, peppers, corn and the enchilada sauce I bought (I think it was just a red sauce) was perfect. I emptied a bag of shredded cheese on top. I would make this again. Though I like mushrooms, I would probably leave them out for everyone else's food pleasure.
I'm not sure I would make this again. Yes, it was good, but the avocado isn't worth the hassle. I'm so bad at knowing when it's ripe, and by the picture you can probably tell that it's a little over ripe the day I used it. Sad. Still gets a thumbs up though!
I think that I simmered the heavy whipping cream a little longer than necessary, but I wanted the cream to be super thick in the final project. Luckily, I (I guess I should say Fiance) had made bacon a couple nights before so I just set it aside. Once the whipping cream was to the thickness I as hoping for, I added the Parmesan cheese. Let's just say I added about 3 times as much as the recipe sad to add. No one was complaining. I did however not add the onions for a change.
I will definitely be making this recipe again for future BBQs and perhaps Thanksgiving. I suggest it to everyone. Thumbs way way up!
