Fruit Slush

Well, I don’t know what I’m going to do with all this fruit slush. I thought about halving the recipe, but what am I going to do with half a can of frozen lemonade and frozen orange juice. Make juice? That would have been smart I guess. Luckily, the recipe says that I can keep this frozen for a few months, so maybe I’ll whip this out when I have a party this summer and add a little booze to it. Sounds good right? I made it per the recipe, with 7-up as my soda and it was pretty good. Not something I would want to drink all the time, but good. I also don’t think I would make this again, it says to freeze for 12 hours stirring every 2 hours. Ain’t nobody got time for that (and neither did I, didn’t stir it like at all, still came out fine I think). Thumbs down.

Salsa Verde

Mmm… salsa. Making salsa is easy, and this particular recipe was no exception. Minus the fact that I had to boil water and then add the tomatillos, this was a piece of cake. Tasted good too! Avocado, jalapeno, onion, etc. All the makings of a great salsa, and being my kind of salsa, it wasn’t chunky! I’m sure this is just because I use a food processor instead of chopping everything up. Still, yummy. Thumbs up.

Country Ham Sandwiches

Being a picnic, I wanted to pick a sandwich. Ham sandwiches seemed easy enough and it totally was. I’m not the biggest fan of sandwiches that don’t have toasted bread, but it’s nice every once in awhile, and this was perfect. The mayonnaise mixture was delightful. I added onion to mine, but everything else about it was just great and what you’d expect from a ham sandwich. I found a really useful container of tomato/onion/lettuce that was cut up perfectly for sandwiches and burgers. Less time for me and less wastefulness for the rest of the tomato and lettuce I would not have eaten. And I used honey wheat bread, because that is what I had at home. Thumbs up.

​Cobre Valley Casserole

This casserole didn’t exactly turn out the way I had expected. Yes, it was good, but it felt more like a dip than a casserole. It has beef, bean, onions, cheese: everything you could ask for in a dish for a Cinco de Mayo dinner at home. I didn’t mind so much that it was more of dip. It just made so much that I don’t know how much of the leftovers I’m going to get through.  I bought some flour tortillas and perhaps I can make myself some small tacos or burritos with it. Yum either way. Thumbs to the side on this one, good enough but not amazing.

Lime Margaritas

What better way to spend Cinco de Mayo (in America that is) than by making some homemade Margaritas. I’ll admit, this is the first time that I’ve made homemade margaritas (without the premixed stuff anyway). Let me tell you, this were amazing. Still not able to knock the Beer Margaritas out of first place, but super super close. The recipe says that it makes like four servings, but I put the whole thing in one glass. By the way, check out my new margarita glasses, aren’t they awesome? Thank you Dollar Tree for such perfect glasses to hold my margaritas.

The next night I went with a frozen strawberry margarita, which is also included in this recipe in the cookbook. Well… something knocked the Beer Margaritas out of first place. Oh my these were so good. It wasn’t until recently that I ever drank frozen strawberry margaritas, I think because the first one I ever had just was not good. But now I think they are my favorite, with the normal on the rocks lime margaritas just behind. I would definitely recommend these two recipes (there is also a frozen lime recipe available, I just didn’t make that one) if you’re up for a margarita one night and don’t want to spend $10 at a Mexican restaurant. Thumbs up, make it!!

Romaine Caesar Salad 

I always like making my own dressing. One, because I have a food processor and would like to give it some use, and two because well why not? One thing about this caesar dressing recipe is I didn’t have enough olive oil. It’s okay though, I don’t really like olive oil. So the amount (a little more than half) I added was just enough for me. Tossed with the romaine lettuce, parmesan cheese, and croutons: this salad was perfect. Thumbs up, make it!

Whiskey Steak Sirloin

I am not a fan of whiskey, and this steak had such a strong amount of whiskey taste I wasn’t a huge fan. First of all, I would suggest that you bake it for longer than the time said. I pulled it out after the 8 minutes and it was tremendously red in the middle. Had to put it in the microwave for a while to finally get rid of it. The whiskey and soy sauce really took over in the taste department. On one hand, it was easy to make: marinate overnight and then broil for ten-ish minutes. It didn’t taste horrible, I mean it’s steak, but I’d rather have some marinade without whiskey (I had Jack Daniels so you can’t even blame the whiskey). If you are a whiskey drinker, you’d love this, but I’ll say thumbs down just for me.

Shredded Potato Casserole

The infamous potato casserole that is at almost every family function. I’ve never made it before, but have always loved eating it. This time was no exception. One thing I need to teach myself (which I did for the steak and the salad, but not the potatoes) is to read the recipe the night before, in case there is something I need to do that night - ya know like THAW THE POTATOES. Well, thankfully my boyfriend is smart and submerged the bag of frozen potatoes in hot water. If it were just me, I would have put off the recipe until the next day. One thing I would change about this recipe is to add more cornflake/cheese mixture to the top. I didn’t feel like there was enough to sprinkle over the entire thing. Thumbs up, make it!

Mumbo Gumbo

Chicken & Okra Gumbo

I didn't quite follow this recipe to a tee. First of all, I don't think I purchased the correct chicken. I ended up getting a rotisserie chicken and then just pulling the meat off. Because of this, I did not do the first step of the recipe where it says to boil in water (this apparently makes the chicken broth). So, I just bough some chicken broth and used that when it was time to add. It worked out nicely. The step with the flour and the oil - yeah I think I kind of burnt that - but it didn't seem to affect the taste of the end product at all. After allowing   it   to   simmer   for 
 an  hour  and  a  half, I added the pulled chicken and allowed it to simmer for another ten minutes or so. This gumbo was perfect over rice (like the recipe suggests) and is quite delicious. I've never had okra before, and though it's really nothing special, I am glad that I've finally had it. Thumbs up on this recipe. I wouldn't recommend making it on a weeknight (unless you don't work during the day) because of the long simmer time, but it's a great treat on a cold night like we have been having in St. Louis. ​

Sweet Potato Muffins

Sweet potatoes have started to become very popular: sweet potato fries, sweet potato chips, etc. And these have never been something I thought tasted good. But these sweet potato muffins are excellent! The recipe doesn't explain how to create the "mashed potatoes." So what I did was boil some water, cut up the potatoes into smaller pieces (they were still pretty big since my knives kind of suck) and boiled them for a half hour. Thank goodness I just bought a masher for those refried beans! After allowing them  to  cool  in  the  fridge,  I  proceeded  to  the
muffin recipe which was pretty easy. Instead of orange peel, I used some orange extract - probably too much since I didn't exactly measure it - but it's definitely not overwhelming in orange taste. I definitely recommend this recipe if you're looking for a muffin recipe for either dessert or breakfast. I now have some extra mashed sweet potatoes though, perhaps I can put some brown sugar and butter on it for a nice "snack" later? I'll give this recipe a Thumbs up. Delish.
