I didn’t mind the blueberries all that much as the bread itself was completely soft and moist.
The recipe had a suggestion to serve with cream cheese, but that is an extravagance I refused to pay for. Sorry to all the shower goers if you wanted this.
One thing I think I really need to invest in is a wire cooling rack. Every time I make cookies, cakes, and even this recipe, I'm told to cool on a wire rack. Which makes sense, but I don't have one. There's one on our registry though so wink wink friends!
I could not find Mojo sauce at my store and it was too late to order online, so I used this recipe to make it by hand. Super easy. Overnight marinade. And then 8 hours in the crock pot with the same ingredients as the marinade.
I attempted to make the mojito sauce, but I didn’t exactly follow the recipe like I should have and the outcome didn’t really work as I expect it should have. We basically had an onion relish rather than a sauce. Still added some to the pork, but I’m sure the actual sauce would have been better. In the pictures in the book, it was displayed like tacos, so that’s what I did. And they were delicious. This is the first time in awhile that I’ll actually eat the leftovers. Thank goodness.
I'm really bad at taking pictures sometimes, so below you'll find the one from the cookbook to compare to the one above that I took myself.
