Burgers and Fish, Oh My!

Cajun Beef Burgers

This is the first time that I've ever put together my own patties out of ground beef. I don't think I did a bad job, I also don't think I did an excellent job either. Apparently, next time I should put an egg in there. This is also the first time (I'm pretty sure) that I've had a burger with stuff inside. This recipe has onions, celery, and carrots mixed into the patties. And it was delicious. I would say my favorite part of this recipe though is the cajun mayonnaise sauce that it calls for. It really makes the burger! It also helps that mayo is pretty much my favorite condiment for burgers. Oh and
the onion rolls. I wasn't sure I'd be able to find these at Shop n Save, but thank goodness I did. They were delicious, though a tad big for the size of the patties I sculpted. I'm going to have to give this recipe a thumbs up for sure and I'd definitely make it again.

BBQ Sauce with Mustard

Okay, quite a few firsts for this post. I've never worked with molasses before. And let me say, I am not a fan. It got everywhere, pretty much like honey (at least when I work with honey it gets everywhere). The sauce though turned out good. The molasses gave it a distinct taste that I am not used to for typical BBQ sauces - I'm not a fan of typical BBQ sauces (except for maybe the Kansas City one from Bandana's). It was easy to make and luckily I had this awesome dressing container to store it in. I'm glad that it will last a few months because I'm sure there is no way me
or anyone else could have gotten through all that in a shorter amount of time - I even halved the recipe! I'm going to give this recipe a thumbs up also and am excited to try some of the other BBQ sauce recipes that I saw in this cookbook.

Creamy Succotash

Not gonna lie, I've never heard of succotash before, but the ingredients listed didn't sound half bad. It was fairly easy to make - though I wasn't a fan of boiling 3/4 cup of water with 3 cups of lima beans, it turned out just fine. The end result was amazing. I'd have to say this may be one of my new favorite side dishes. It was creamy (well, duh) and colorful so I'm sure it's a little bit healthy at least. I'm definitely going to make this again, especially for a summer barbecue or party. Thumbs up!

Broiled Cod

Well this was just the easiest cod recipe I've ever used. Marinated in Italian dressing and spices, then broiled for a short amount of time. And it came out hot, flaky, and perfect for fish. I should have discovered this recipe at the beginning of Lent huh? Speaking of Lent, can you believe it's already Easter? Wow just wow. Okay, back to the recipe. I'm going to have to give this a thumbs up, the flavor was good and it was extremely easy. I'd recommend it, especially if you like fish like me!

Portuguese Cacoila et. al.

Spicy Slow Cooked Portuguese Cacoila

I just want to start off saying that this recipe was amazing. Not only was it super easy, but the pork ended up being so tender and moist and the seasonings were perfect. I could really taste the spiciness from the paprika and the red pepper, but I could also taste the sweetness from the cinnamon. It was the best combination! And the whole thing was made in a crock pot so the only work I had to put into it was cutting up the pork and add it in zip-lock bag along with the wine and  spices.  By  the  time  I  got home from work, 
the house smelled absolutely amazing. I would definitely make the recipe again. Everyone that tried it said it was really good and I have to agree with them completely. Side the sandwich with some chip (I chose Cool Ranch Doritos) and you have yourself a nice and easy dinner for a week night. Thumbs up!

Big & Buttery Chocolate Chip Cookies

Well this post is going to be full of things that are delicious. So I didn't follow the recipe EXACTLY, first, I didn't do the whole roll into balls and refrigerate. Mostly because I didn't have time to that, as I was making them for something just a few hours later in the day. Also, I didn't add any walnuts, why mess up a good thing? Anyway, because they weren't being baked after refrigeration, I had to cut down the bake time to about 8 minutes. Some of them got a little brown as I'm sure you can tell from the picture, but oh
man oh man, I think these are the best chocolate chip cookies I've ever made. And that's saying something because I make cookies all the time - just ask everyone that knows me. Definitely will use this recipe again. There's always a time when Chocolate Chip Cookies are necessary! Thumbs up!

Watergate Salad

It seems I am getting into the habit of not following the recipe to a tee. And that's okay right? As long as I'm not changing chicken to fish or something extravagant. I did not put the pineapple in this recipe. I think pineapple is disgusting and it would have been waste of time and money if I made something that I wouldn't even try, or no one would eat. So, here we have Watergate Salad sans Pineapple. It was pretty good. I will same I am a fan of pistachio pudding and ice cream, so I was pretty stoked to try this out. The recipe says to chill for at least 2 hours,
I didn't chill it for a very long time before trying it, but it was still pretty good. It was very sweet, so I couldn't eat too much of it in one sitting. The marshmallows were great and I sprinkled pecan bits on top (yummy!). I probably wouldn't make this again, but I'm glad I did this time around.  Thumbs up.

Elvis' Sandwich, Clams, and Some Rum

Toasted PB & Banana Sandwiches

I am a little behind on writing about some things that I've made in the past few weeks. For Valentine's Day, I made Toasted Peanut Butter and Banana Sandwiches (which I had never heard of before, but people are work were like "They ROCK") and I was pretty excited. The recipe itself was easy, I don't usually like working with Honey and that day was no exception. It got everywhere and my entire counter was sticky. The sandwich outcome was great, I liked the fact that they were toasted, I'm not sure I would 
have eaten it with just plain bread. Peanut Butter is just so messy and sticky and hard to eat - for me at least. For a side I made some tater tots (leftover from Pizza Totter recipe) and I thought they went nicely together. I wouldn't say that they "ROCK" but the sandwiches were easy to make and still tasted good. Thumbs up!

Daiquiris

I am NOT a fan of these drinks. Never having a daiquiri before, I was pretty excited to make another drink recipe from this book and try it out. The recipe was rum, lime juice, and syrup. That is it, so the rum wasn't diluted at all! It was way to strong for my liking, perhaps I could have added more syrup? Or more lime (I do love my lime)? I'm not sure, but it wasn't good. It was fun however to make - loving my cocktail shaker! I'd still be willing to try Strawberry Daiquiris though, so if you have a recipe for that please send it my way! Thumbs Down.

New Haven Clam Pizza

I was looking for something simple to make for dinner on a week night and came across this pizza. New England Clam Chowder is by far my favorite soup, however, this is the only thing I've ever had clams in. So I wasn't scared to make this pizza, but I knew it was going to be different. Using Pillsbury pizza crust (because I don't like making bread nor did I have the time), I put the mozzarella, cooked bacon, clams, and Parmesan cheese. Let me tell you - this pizza was delicious. I couldn't tell that there were clams on it (which may or may not be a good thing?). I think the 
bacon really set it up to win. From past experience, this pizza crust is my favorite: it's both crunchy and soft in the right portions. I'm going to say this recipe is a thumbs up in my book.
