Maine Mud Cookies

​Ah, cookies, my favorite thing to bake. Mostly because I know that I’m good at it… when using my oven anyway. They are also an easy thing to make when you’re wanting to take something to a party… who doesn’t love cookies? I chose these ones because they didn’t seem weird (I’m still putting off those potato chip cookies), but interesting. Plus they were from Maine, which I would like to be my next vacation.

The ingredients include applesauce, which is strange to me, but I feel like it makes the cookie that much more soft, moist, and delicious. And the basis of this being chocolate, you can’t go wrong! Mix everything up in a bowl and bake. They came out perfect!
I didn’t do the whole, smooth into irregular shapes thing, because I feel like my cookies always come out in irregular shapes and didn’t want to do that extra step just for looks. They baked the same regardless I’m sure and the shape wouldn’t affect the taste! I’d recommend these cookies if you’re looking for something slightly different. They were soft, yet had a cake consistency that was delicious.

Beef Brisket w/Mop Sauce

After purchasing all the ingredients for this recipe, I read the little side note at the end that says “this is for fresh brisket, not corned beef.” Well, all my grocery store had was corned beef so I just continued on with the recipe. The Mop Sauce was really easy to make.
I just mixed all the ingredients and poured it over the beef. I let it bake for two hours and it actually came out perfect (well, maybe a little more done than it needed to be, but still tasted good). This was super simple, as long as you have the time to let it bake for a couple hours, you’re golden with this recipe. ​

Mushroom-Swiss Mac N Cheese

I made this for the department picnic I had last week. One reason was because the main ingredient is cream cheese, and the other because who doesn’t love mac n cheese? When I originally made it, it was so completely cheesy that I was intrigued even myself. 
It looked and smelled even more delicious after I baked it in the over. For the picnic though, I had to reheat it in a crock pot. Though it still tasted not bad, I’m sure it would have been heavenly right out of the oven. As for the recipe, it wasn’t difficult to make and I love that there were mushrooms. While I was sauteing the mushrooms and onions, it smelled to aromatic. Thank goodness I had already eaten dinner that night.

Creamy Garlic Dressing

To go along with dinner and the beef brisket, I felt like a salad would be great and what better way to cross something off the list than with a dressing recipe. This one is to die for. I am a big fan of garlic, and the fact that this is creamy is just even more great. The recipe was super simple: put all ingredients together and shake. 
That’s it! I loved making it for this reason. And when I topped my salad with it, it was amazing. This is probably going to be my favorite recipe out there when it comes to dressings. You all should definitely try this one. ​​

Orange Meringue Pie

So I decided to add something not so easy to the mix for dessert. A meringue pie, and guess what? It was a B* to make. The filling was fine and dandy, heat up some orange juice and sugar and there you have it. But the meringue. Now, I knew going into this that it would be a pain, but it was an even bigger pain that I thought. 
I think I literally whipped the cream for twenty minutes before it started to form peaks. Maybe I have a bad mixer, or perhaps this is just true in nature for meringue. Needless to say, I didn’t have fun making this one. I did however have fun eating it. It tasted so great and I’m just glad that the meringue on top turned out ok and caramelized perfectly in the oven. I don’t think I’ll make this again unless I can find pre-made meringue somewhere. ​​

I'm going to try to go in order from now on, just to make it slightly easier to keep track of. Next up on my list is: Southern Buttermilk Biscuits, Southern BBQ Chicken, Down Home Hush Puppies, Catfish Spread, and Lemonade Icebox Pie. We will see how many I get done, but it's nice to dream right? Stick around!

Portuguese Cacoila et. al.

Spicy Slow Cooked Portuguese Cacoila

I just want to start off saying that this recipe was amazing. Not only was it super easy, but the pork ended up being so tender and moist and the seasonings were perfect. I could really taste the spiciness from the paprika and the red pepper, but I could also taste the sweetness from the cinnamon. It was the best combination! And the whole thing was made in a crock pot so the only work I had to put into it was cutting up the pork and add it in zip-lock bag along with the wine and  spices.  By  the  time  I  got home from work, 
the house smelled absolutely amazing. I would definitely make the recipe again. Everyone that tried it said it was really good and I have to agree with them completely. Side the sandwich with some chip (I chose Cool Ranch Doritos) and you have yourself a nice and easy dinner for a week night. Thumbs up!

Big & Buttery Chocolate Chip Cookies

Well this post is going to be full of things that are delicious. So I didn't follow the recipe EXACTLY, first, I didn't do the whole roll into balls and refrigerate. Mostly because I didn't have time to that, as I was making them for something just a few hours later in the day. Also, I didn't add any walnuts, why mess up a good thing? Anyway, because they weren't being baked after refrigeration, I had to cut down the bake time to about 8 minutes. Some of them got a little brown as I'm sure you can tell from the picture, but oh
man oh man, I think these are the best chocolate chip cookies I've ever made. And that's saying something because I make cookies all the time - just ask everyone that knows me. Definitely will use this recipe again. There's always a time when Chocolate Chip Cookies are necessary! Thumbs up!

Watergate Salad

It seems I am getting into the habit of not following the recipe to a tee. And that's okay right? As long as I'm not changing chicken to fish or something extravagant. I did not put the pineapple in this recipe. I think pineapple is disgusting and it would have been waste of time and money if I made something that I wouldn't even try, or no one would eat. So, here we have Watergate Salad sans Pineapple. It was pretty good. I will same I am a fan of pistachio pudding and ice cream, so I was pretty stoked to try this out. The recipe says to chill for at least 2 hours,
I didn't chill it for a very long time before trying it, but it was still pretty good. It was very sweet, so I couldn't eat too much of it in one sitting. The marshmallows were great and I sprinkled pecan bits on top (yummy!). I probably wouldn't make this again, but I'm glad I did this time around.  Thumbs up.
