I’m so glad that I finally bought myself a meat thermometer, because now I can stop cutting into the thickest part of the meat to see if it’s done! So simple and I recommend any cook to have it in their kitchen.
As for the blueberry portion of the dish, I could have done without. However, it did add a new flavor to the chicken that didn’t taste terrible. As for the chicken, oh my was it delicious. Either I got some good chicken from the store (it was fairly expensive this time) or I just cooked it well for once. Yum!
I didn’t have any lemon juice like I thought I did, so I ended up just using some lime juice. That seemed to work out just fine. I really like the capers that were in the recipe and I was actually amazed at how pink the dish turned out. Not sure why I was amazed… I mean there is salmon in it! Now I gotta figure out how to eat more before it goes bad, salmon isn’t cheap!
