by Joey J.I was excited to try this recipe because it involved staples that I always have on hand, bell peppers, onions, black beans, and diced tomatoes. While I was nervous about adding vinegar to the beans, I was pleasantly surprised with the result. The vinegar removed any 'canny' taste that comes with using canned beans and tomatoes, with the spices added you couldn't even tell it was in there. A consistent theme that I am noticing in these recipes is that they do not have salt in them, I added about 1/2 teaspoon of salt to the dish as it needed the seasoning. I plan to make this dish again but with some minor tweaks; only using one bell pepper or adding another can of beans because the bean to other item ratio was a little off for me.
