Tortilla Dressing & Ambrosia Salad

I'm a little late getting this post up, about a month. Whoops! So at our last book club meeting, we did a Mexican/Southwestern themed foods and I decided to make the Tortilla Dressing to go with the delicious chicken that Erica made. I always get confused when the title of the recipe says "dressing" because it could either be a salad dressing or in this case, a stuffing.

The stuffing was delicious. It had just the write amount of kick to it from all the spices. I thought the peppers and onions really added to the flavor and overall southwestern taste of the dish along with the tortilla strips and little bit of cornbread stuffing. On top of that, it made the kitchen and the car smell so delicious!
I didn't change much with this recipe. I did however just buy the tortilla strips that  you put on salads instead of cutting and baking them myself. If you follow my blog you know I always like to cut corners whenever possible. Since I mentioned earlier it's been awhile since I made this, I don't remember much else other than the aromas coming from the oven! I would recommend this for sure, maybe even over typical stuffing for your next Thanksgiving feast to change it up a little. Thumbs up!

Ambrosia Salad

The ingredients in this recipe are a strange combination. Something I wouldn't even try, therefore it got made and taken to my department's picnic and guess what, it barely got eaten there too. Ambrosia salad is that weird dish that's just too weird for people to wrap their heads around. This one has pineapple, oranges, marshmallows, coconut, and sour cream. I feel like it's the sour cream that turns me off the most, other than the pineapple which I hate with a passion. 

Other than that though, it's very simple to make. I had forgotten to make it the night before, and was able to whip it together in the morning before work.
I don't know what I'm going to do with this extra coconut though (I still had some leftover from those Surfer Splits). Maybe I'll look into the list and see what all needs coconut. I would hate to wash it! The marshmallows I'm sure can be used for something... it's almost fall so a s'mores cake or pie? Sounds yummy! 

I wouldn't make this ambrosia salad again and I hope there's not another recipe in this massive cookbook. I'm currently trying to take a break from all these recipes because of the amounts of money I'm spending and shouldn't be spending. Sorry for the sparse posts! Once we get into our new house I promise to start being more active again!
