Baja Chicken Taco Pizza

Only one recipe this week! I've been slacking slightly. But it's a good one!

I wanted to do something simple for a week night dinner. Pizza was the best option in my opinion, and this one was absolutely delicious. However, cooking this pizza is a prime example of how I’m not the best at following directions, or perhaps I was just too excited to make another homemade pizza. I totally forgot to add the sauce on before the cheese and the chicken. Whoops. So the resulting pizza was a little more saucy that it should have been, it didn’t defer from the taste at all though. I only had spicy ranch at home, so that is what I used for the sauce/salsa mixture, and let me tell you was it spicy! It was a little too spicy for me, but still was delicious and a great pizza I think. I didn’t put avocado on it, which probably would have masked the spiciness a tad, because I didn’t want to waste an entire avocado for one slice of pizza. I used Pillsbury pizza crust, because that is my favorite. Thumbs up, make it!

Fish Tacos w/Avocado Sauce

Fish Tacos are one of my favorite dishes, though I’ve never made them at home before. These were delicious. I got tilapia for the fish and it was perfect with the avocado sauce that this recipe calls for. I love avocados as well, just hate how they brown so quickly. As for the salsa portion of this recipe, I totally messed that up and ended up with more of a guacamole. I’m not complaining though, it was still delicious. I will definitely be making this again because it’s both easy and delish. Thumbs up. ​

Apricot Walnut Bars

For dessert, I made these apricot bars and they actually turned out pretty good. It was a little weird boiling the dried apricots, I’m not sure it actually did anything because they looked and tasted the same before and after the process. My favorite all-time dessert is the lemon bar, and these weren’t far off. The brown sugar, apricots, and walnuts were the perfect combination for a great but light dessert. Thumbs up.

Homey Mac & Cheese

Mac and Cheese is almost always a good choice when it comes to making sides, and this was no exception to the ribs were were having that night. I will say, Kraft Macaroni and Cheese is still my favorite. This recipe however had so much cheese and it was less processed foods that the blue box that it may or may not have been healthier. It was delish as well, but I think I’ll stick to the Kraft for my Mac and Cheese needs, just out of convenience and taste preference. Thumbs up.
